Brenham House Date Cake

- 8 oz Dates
- 1 cup Flour
- 4 Eggs
- 2 cups Pecans
- 1 cup Sugar
- 2 tablespoons Whiskey
- 1 tablespoon Vanilla
- 2 teaspoons Baking Powder
Steps:
- Preheat oven to 350 degrees and spray a loaf pan with non-stick cooking spray.
- Cut dates with kitchen scissors into a bowl. Add the whiskey and vanilla to bowl and set aside.
- In a mixer, cream the sugar and eggs together.
- Slowly add, to the mixer, the sifted flour and baking soda. Then add the chopped nuts and date mixture.
- Pour into a greased loaf pan and bake at 350 degrees for one hour. Make sure the center is done to touch.
