Cashew Salad
Total preparation time: 20 minutes
Serves: 4Ingredients:
- 1 head romaine lettuce, torn into bite sized pieces
- 8 oz Swiss cheese, shredded
- 1 cup cashews
- 1 cup croutons
- 1 cup vegetable oil
- 3/4 cup sugar
- 1/3 cup vinegar
- 1 teaspoon dijon mustard
- 1 teaspoon onion, grated
- 1 tablespoon poppy seeds
- salt to taste
Steps:
- Toss romaine, cheese, and cashews in large bowl.
- Prepare dressing by blending together oil, sugar, vinegar, mustard, onion, poppy seeds and salt.
- Pour dressing over salad mixture. Toss to coat. Add crutons.
- Optional: Add a can of mandarin oranges or chopped pear.
