Cream of Mascarpone cheese

- 200 gr. Mascarpone cheese
- 4 eggs
- 200 gr sugar
- 2 little glasse rum
- 2 dozen dried cookies
Steps:
- Beat first just the yolk of eggs with the sugar, when the cream looks almost white, add the liquor and then the Mascarpone cheese which you have previously amalgamated with a wood spoon to make it softer
- Mix well; meanwhile separately beat the egg-whites stiff and add them very delicately to the compound
- Pour the cream in cups and put it in the refrigerator, then serve it with the dried cookies. Or use it to garnish and stuff other cakes
