Accidental Omelet

Serves: 2Ingredients:
- 6 eggs
- 1/2 zucchini, julienned
- 2 Roma Tomato, sliced
- 2 Onion Slices, halved
- 4 teaspoons olive oil
- 3 tablespoon Basil, chopped
- 1/2 cup Swiss Cheese, grated
Steps:
- Chop vegetables
- Beat eggs, 3 at a time,in separate bowls
- In medium sautepan, saute onions and zucchini in 2 tsp oil, until onion is almost transluscent. Add basil and tomato, cook just till heated through.
- Over medium heat, heat 1 tsp oil in small omelet pan, add eggs, stir eggs and lift sides to allow eggs to run under until omelet begins to set. Sprinkle 1/4 C. of cheese on omelet. Add half of veggies to one side of omelet. Let cheese melt and fold omelet. Flip to warm other side. Serve.
- Rinse omelet pan and repeat steps to make second omelet.
