French yogurt and grapefruit cake

Total preparation time:  45 minutes
Serves:  8

Ingredients:

  • 1/2 cup plain yogurt
  • 1 1/2 cups white flour
  • 1 1/2 teaspoons baking powder
  • 1 pinch salt
  • 1 1/4 cups granulated sugar
  • 1/2 cup vegetable oil
  • 3 eggs (extra large)
  • zest and juice from one grapefruit

Steps:

  1. Preheat the oven to 350° Fahrenheit (180°C).
  2. Line an 8-inch (20cm) round cake pan or springform tin with baking parchement.
  3. Put the yogurt, flour, baking powder, salt and sugar in a large bowl. Mix in the oil and the eggs and add the grapefruit zest.
  4. Put the mixture in the prepared tin and bake for 30-35 minutes or until a skewer inserted into the centre of the cake comes out just clean.
  5. Drench with the reserved grapefruit juice.
