Dutch Babies

- 1/2 cup Milk
- 1/2 cup Milk
- 1/2 cup All purpose flour
- 2 Eggs, large
- 4 tablespoons Unsalted butter
- 3 tablespoons Fresh lemon juice
- 1 1/2 cups Powdered Sugar
- Fresh fruit - strawberries, blueberries, bananas
- 1 cup Whipped cream
Steps:
- Preheat oven to 475 degrees. Melt butter 2 Tbsp butter in each large ramkin and heat until very hot, but not browned
- While butter is melting, whisk milk and eggs together together until smooth and frothy, add flour little at a time, whisking constantly
- Remove the hot ramkins and tilt so the butter coats the sides. Pour half the liquid mixture into the each ramkin and cook until the pancake is puffed and golden (12 to 15 minutes. Do not open the oven until done as they will fall
- Remove ramkins from the oven and immediately add lemon juice in the well in each pancake followed by sifted powdered sugar.
- Add fresh fruit and top with more sifted powdered sugar. Serve whipped cream on the side.
