Peg's 'Passages' Pancakes

Serves: 4Ingredients:
- 2 cups Whole Wheat Flour
- 1/8 teaspoon Salt
- 3 teaspoons Baking Powder
- 3 Eggs
- 2 tablespoons Raw Honey
- 2 1/4 cups Plain, unsweetened Soy Milk
- 1/2 teaspoon Pure Vanilla
- 4 tablespoons Melted unsalted, sweet butter
Steps:
- Heat skillet at med-high heat, add unsalted, sweet butter to cover. Before adding pancake batter, with a paper towel wipe excess butter from skillet. Skillet must be hot without burning the butter.
- Measure dry ingredients into large bowl. Whisk together until well blended.
- Whisk eggs lightly. Whisk together well soymilk, honey, melted butter, & vanilla. Whisk eggs gently into soymilk liquid.
- Quickly add all wet ingredients into dry ingredients. Gently whisk together until just blended. Batter should be relatively thick.
- Use a soup ladle to ladle batter onto hot, sizzling griddle/skillet. Once pancake bubbles, flip once. Pancakes will puff up and be light & fluffy. Serve hot with unsalted, sweet butter & Maple syrup.
