Bananas Foster Whimsy Cake
Steps:

3 eggs
1 teaspoon of Vanilla Flavoring
1 ¾ Cup of All Purpose Flour
1 Tablespoon of Sugar
1 Tablespoon of Baking Powder
1 ¾ Cup of Milk (Whatever type you prefer)
1 Stick (8 Tablespoons) of butter or margarine (your preference), melted
Topping
2 oz. Butter
1 Banana Sliced
2 oz. Brown Sugar
2 oz. Brandy

Preheat oven to 425 degrees. Pull out an oven safe skillet. (I prefer to use a cast iron skillet; it reminds me of my Southern roots.) You will use this to bake the cake.
In a mixing bowl, crack the 3 eggs. Add vanilla to the egg. Measure out the flour in a one cup measuring cup. Just eyeball the ¾ cup. I use a serving spoon about the same size as a tablespoon to scoop out the flour so that I only dirty one spoon, then use this again to get the sugar and baking powder measured out and into the bowl. Then use the same measuring cup to measure the milk again eyeballing the ¾ cup. Use the same cup to measure the flour first.
Melt your butter. While butter is melting, whisk mix every thing else together. Whisk the melted butter in with the rest of the batter.
Pour the batter into your oven proof skillet and bake 15 to 20 minutes or until the top of the cake is golden brown. This is your basic cake. Cut it into ¼ to serve. - Topping
Melt the butter in a sauté pan, adding the bananas to the pan. Heat the bananas through. Add the brown sugar, stirring till the sugar melts and begins to bubble slightly. This is the fun part. Have a flame ready to ignite the brandy. Pour the brandy into the pan and ignite. Swirl the sauce in the pan until the flame dies down and disappears. Your sauce is done. Spoon the topping over the cake portions and serve. - You can whisk in chocolate chips, nuts, dried fruit, fresh fruit any thing you like into the batter before baking. Make any sort of topping from Bananas Foster sauce too, simply warming up your favorite fruit preserves to make it your own.
