Eggs bennedict

Serves: 2Ingredients:
- 4 eggs
- 3 egg yolks
- 4 thick slices grilled focaccia artisian bread
- 2 tblsp lemon
- 2 tblsp hot water
- 1 stick of sweet unsalted butter-melted & hot
- salt & pepper
- cayenne or favorite hot sauce
- paprika
- chives
- sliced lemon rounds
- 4 slices Canadian Bacon
Steps:
- Poach 4 eggs. Grill Canadian bacon and bread.
- Hollandise sauce
In a blender put 3 egg yolks,hot water, lemon juice. Blend until frothy about 1-2 minutes. Drizzle in hot butter slowly as you blend. Add hot sauce to taste.
- Assemble. Bread, bacon, eggs and sauce. Add salt, pepper and paprika.
- Garnish with chives on top and lemon slices around your plate.
