Peach Stuffed French Toast
Serves: 8Ingredients:
- 1 loaf sweet French Bread
- 8 oz cream cheese & 1 tsp. vanilla
- 1/2 cup homemade peach preserves
- 1 dozen eggs
- 1 cup heavy whipping cream
- 1/2 cup maple syrup
- peach slices for garnish
- chopped walnuts
Steps:
- In a bowl, cream together cream cheese, vanilla & jam. Slice the bread in 16 slices.
Spread generously between 2 slices of French bread, and then place in a 9x13 pan (you can squeeze in 8 pairs).
- Mix eggs, cream, and maple syrup throughly, then pour over bread slices, starting around edge of the pan first (to evenly coast bread slices). Sprinkle with a mixture of cinnamon (3) and sugar (to 1).
- Cover and store overnight in fridge. In the morning take out and sprinkle with a small handful of chopped walnuts if you wish and bake 35-40 minutes until egg mixture is set.
- When serving you can sprinkle powdered sugar and garnish with fruit/mint leaf.
