Peach Stuffed French Toast: Breakfast-Brunch

Servings: 8

Ingredients:

  • 1 loaf sweet French Bread

  • 8 oz cream cheese & 1 tsp. vanilla

  • 1/2 cup homemade peach preserves

  • 1 dozen eggs

  • 1 cup heavy whipping cream

  • 1/2 cup maple syrup

  • peach slices for garnish

  • chopped walnuts

Step 1:

In a bowl, cream together cream cheese, vanilla & jam. Slice the bread in 16 slices. Spread generously between 2 slices of French bread, and then place in a 9x13 pan (you can squeeze in 8 pairs).

Step 2:

Mix eggs, cream, and maple syrup throughly, then pour over bread slices, starting around edge of the pan first (to evenly coast bread slices). Sprinkle with a mixture of cinnamon (3) and sugar (to 1).

Step 3:

Cover and store overnight in fridge. In the morning take out and sprinkle with a small handful of chopped walnuts if you wish and bake 35-40 minutes until egg mixture is set.

Step 4:

When serving you can sprinkle powdered sugar and garnish with fruit/mint leaf.
