Greencastle Estate Caramel Apple Pancakes
Steps:
- 5c Flour
5t Baking soda
2t Salt
Large Eggs
½c Milk
5c Buttermilk
- Whisk dry ingredients together in large bowl. In Separate bowl, mix together wet ingredients. Fold in milk mixture, then set aside.
Prepare filling and caramel sauce as specified below.
Cook pancake batter on a greased skillet, over medium heat. Use approximately ¼ cup batter per pancake – producing a 4 - 5” pancakes.
Stack three pancakes on each plate, placing approximately 1/3 cup of apples between each layer and on top.
Drizzle with caramel sauce and sprinkle with chopped pecans. Side with your favorite breakfast meat (country ham goes nicely), and serve immediately.
- Apple Filling (8 cups)
6 Large Granny Apples (8 medium)
1c Sugar
¼c Lemon Juice
2qt Water
Combine water and lemon juice in large bowl. Peel, core, and slice apples; placing them in bowl. Submerse, to prevent apples from browning. (To save time, apples can be prepped the night before and refrigerated. The liquid can be discarded after the apples have soaked 5 minutes.)
Layer apples and sugar in a microwaveable pan/dish. Cover with plastic wrap and microwave on high for 5-7 minutes. Apples should be hot and tender, not mushy.
- Carmel Sauce
1c Sugar
1c Brown Sugar
1c Light Corn Syrup
½c Water
½c Heavy Cream
1c Vanilla
¼t Salt
2c Chopped Pecans
In medium saucepan, combine sugars, corn syrup, and water. Bring to a full boil. Gradually add cream. (Be sure boiling does not stop.)
Cook over medium for 3 minutes, stirring occasionally. Remove from heat; stir in vanilla and salt.
