Cove Fries

Serves: 6Ingredients:
- 5 large Boiled Potatoes
- 4 oz. Cream Cheese
- 1/8 teaspoons Dill Weed
- 1/8 teaspoon Garlic Pepper
- 1/8 cup Milk or cream
- 2 tablespoons Butter
Steps:
- Drain cooked, boiled potatoes after they are soft when poked with a fork (as in making mashed potatoes).
- Mash potatoes to a creamy consistency. Add cream cheese, butter & milk. Mix thoroughly. Add dill weed. Mix thoroughly.
- Plop a large spoonful of potatoe mixture (about the size of a small pancake) onto a well oiled griddle or frying pan preheated at approx. 350 degrees. Flatten with spatula or spoon to about 1/4 to 1/2 inch. Continue making "potatoe pancakes" until all potatoe mixture is used.
- Sprinkle enough garlic pepper on top of each cove fry to lightly cover top. Fry cove fry until golden brown, approx 7-10 minutes.
- Flip cove fry and lightly apply more garlic pepper on top of cove fry. Continue to fry until bottom is golden brown. Approx. 7-10 minutes. Remove and serve while hot. Be careful, though! Middle can be piping hot!! Enjoy!
