Lemon Oven Pancake

Serves: 2Ingredients:
- 1/2 cup milk
- 1/2 cup flour
- 2 eggs
- 4 tablespoons butter
- zest 1 lemon
Steps:
- Pre-heat oven to 425 Degrees
- melt butter in 10 inch oven ready skillet - when melted remove from heat
- whisk together all ingredients - wet and dry - pour into buttered pan
- place in the oven for 2o minutes or until puffed and lightly browned
- cut into 4 wedges with pizza cutter and (Optional) sprinkle lightly with powdered sugar. Serve immediately while hot!
