Kumquat Marmalade

Serves: 20Ingredients:
- 2 lb fresh, ripe Kumquats
- Water
- 1 and 1/8 cups Sugar
Steps:
- Rinse kumquats and remove any stems. Slice kumquats in half or in quarters and separate peel from fruit.
- Cook fruit and 2 cups water in a medium-sized pan at a low simmer for 30 minutes. Strain cooked fruit, reserving liquid. (Discard fruit.) Return liquid to a medium-sized pan with sugar and 2 cups cool water.
- Meanwhile, place peel in a small pan and cover with water. Bring to a boil and cook for 1 minute. Drain. Cover again with cool water and return to the boil for 1 minute. Drain and repeat twice more.
- Drain peel and rinse with cold running water until cool enough to handle. Grind peel in a food grinder or processor (not a blender), or slice into thin strips by hand.
- Heat, stirring, the reserved fruit liquid until sugar dissolves. Add sliced peel and cook at a full boil, stirring occasionally, until liquid reduces to a thick syrup and peel is bright orange and translucent. Remove from heat and pack in glass jars. Cool and enjoy!
