Pistachio-Chive Crisps

Serves: 6Ingredients:
- 1 c. all purpose flour
- 1/3 c. fresh chives (French or classic), snipped
- 3 TBSP. spring water
- 3 TBSP. cold pressed, extra virgin olive oil
- 2 TBSP plus 1 tsp. pistachios
- 2 TBSP. grated Parmesan or Romano Cheese (separately or mixed)
- Caper Mustard: 1 TBSP. Dijon, 1 TBSP. Balsamic capers (drained), 1 TBSP. snipped chive
Steps:
- Preheat oven to 325 degrees. Combine flour, chives, 1/2 tsp. sea salt, 1-2 healthy grinds of coarse black peppercorns. In a separate bowl, combine water and CPEVOO, then drizzle oil mixture into flour mixture; stir constantly, then continue to work with hands. Form dough into a ball.
- Roll dough out onto a floured surface into a 13" X 8" rectangle (about cookie sheet size). Prick all over with fork. Sprinkle with pistachios and cheese(s)/press in nuts/cheese. Cut dough into cracker sized rectangles. Transfer onto ungreased cookie sheet.
- Bake 20-25 minutes until crisps begin to brown. Transfer crisps to a wire rack to cool. Serve crisps with Caper Mustard.
