Olive Relish

Serves: 6Ingredients:
- 3/4 c. whole pimiento-stuffed green olives, chopped,
- 1/3 cup red onion chopped
- 1/4 c. flat-leaf Italian parsely, snipped
- 2 TBSP. capers, drained
- 1 small jalapeno, seeded/chopped--BE CAREFUL
- 1 TBSP. white wine vinegar or cooking sherry
Steps:
- In a ceramic or stainless steel bowl, combine all ingredients. Season to taste with coarsely ground black peppercorns. This is a great condiment to serve with white fish/cod/tilapia!
