Baked Butter Beans with Mustard

Serves: 8Ingredients:
- 10 oz. packaged, precooked bacon pieces
- 1 large red onion
- 4 16 oz. cans of butter beans
- 8 oz. dairy sour cream
- 1/2 c. chicken broth
- 1 TBSP all purpose flour
- 1 TBSP snipped fresh rosemary, destemmed
- 1 TBSP Dijon style mustard
- 1-4 healthy grinds of black peppercorns
- 2 TBSP. chopped flatleaf Italian parsley
- 3 tsp. finely shredded lemon peel
Steps:
- Preheat oven to 325 degrees. Cook onion in 1 TBSP. oil or butter. Transfer to large bowl. Add bacon, rinsed/drained beans.
- Mix sour cream, broth, flour, rosemary, mustard and pepper. Stir into bean mixture and transfer into baking pan. Bake, covered for 30 minutes, then stir and bake for another 15 minutes. Top with bacon, lemon peel and parsley just before serving.
- This is SUCH a different way to enjoy bean protein if you are tired of the same old, same old holiday bean recipes. Hint: the rosemary helps make the beans very easy to digest! Who knew??
