Broccoli-Raisin-Cauliflower Salad

Total preparation time:  30 min.
Serves:  8

Ingredients:

  • 6 cups fresh broccoli forets
  • 3 cups cauliflower forets
  • 1/3 c. golden raisins
  • 1/3 c. walnuts, toasted
  • 1/4 c. olive oil
  • 1/4 cider vinegar
  • 1 TBSP sugar
  • 1/2 tsp. dried basil, crushed
  • 2-4 healthy grinds of black peppercorns
  • 1.4 tsp. crushed red pepper

Steps:

  1. Blanch broccoli and cauliflower florets separately. They will be crisp and brightly colored. Rinse with cold water to set-blanch. Drain well.
  2. Layer broccoli, cauliflower, raisins, walnuts. Repeat. Cover and chill. Combine the remaining ingredients for dressing and mix well until sugar dissolves. Add dressing just before serving.
