Broccoli-Raisin-Cauliflower Salad

Serves: 8Ingredients:
- 6 cups fresh broccoli forets
- 3 cups cauliflower forets
- 1/3 c. golden raisins
- 1/3 c. walnuts, toasted
- 1/4 c. olive oil
- 1/4 cider vinegar
- 1 TBSP sugar
- 1/2 tsp. dried basil, crushed
- 2-4 healthy grinds of black peppercorns
- 1.4 tsp. crushed red pepper
Steps:
- Blanch broccoli and cauliflower florets separately. They will be crisp and brightly colored. Rinse with cold water to set-blanch. Drain well.
- Layer broccoli, cauliflower, raisins, walnuts. Repeat. Cover and chill.
Combine the remaining ingredients for dressing and mix well until sugar dissolves. Add dressing just before serving.
