Sopa dell' Italia

Serves: 12Ingredients:
- 3/4 lbs. hot Italian sausage, removed from casing
- 3/4 lbs. mild Italian sausage, removed from casing
- 1 onion, chopped
- 2 green peppers, chopped
- 4 c. beef broth
- 2 c. red wine
- 1 clove garlic, minced
- 2 T. parsley, chopped
- 1/2 t. oregano (chopped fresh or dried)
- 1/2 t. basil (fresh chopped or dried)
- 1 bay leaf
- 28 oz. can whole peeled tomatoes, chopped
Steps:
- Saute sausages, onion, garlic, and green peppers. Add broth, red wine, parsley, oregano, basil, and tomatoes.
- Simmer about 1 hour. Add pasta, and cook until pasta is al dente. Add more broth if necessary. Serve with a crusty country Italian bread and dipping sauce, and a BIG salad.
This soup is hearty and freezes extremely well.
