Sopa dell' Italia

Total preparation time:  1 hour
Serves:  12

Ingredients:

  • 3/4 lbs. hot Italian sausage, removed from casing
  • 3/4 lbs. mild Italian sausage, removed from casing
  • 1 onion, chopped
  • 2 green peppers, chopped
  • 4 c. beef broth
  • 2 c. red wine
  • 1 clove garlic, minced
  • 2 T. parsley, chopped
  • 1/2 t. oregano (chopped fresh or dried)
  • 1/2 t. basil (fresh chopped or dried)
  • 1 bay leaf
  • 28 oz. can whole peeled tomatoes, chopped

Steps:

  1. Saute sausages, onion, garlic, and green peppers. Add broth, red wine, parsley, oregano, basil, and tomatoes.
  2. Simmer about 1 hour. Add pasta, and cook until pasta is al dente. Add more broth if necessary. Serve with a crusty country Italian bread and dipping sauce, and a BIG salad. This soup is hearty and freezes extremely well.
