Pickled Okra Sandwiches

Serves: 20Ingredients:
- 1/24 oz. loaf sliced white bread
- 8 oz. package cream cheese, softened
- 16 oz. jar pickled okra (the "hot" pickled okra is nice)
- 1 c. finely chopped fresh parsely leaves
- 1/2 c. finely snipped chive
Steps:
- Remove bread crust. Roll out bread slices with rolling pin. Mix cream cheese with chive, and coat each bread slice. Place an okra spear in the center of each slice of coated bread, and roll up.
- Spread a light coat of cream cheese/chive on outside of each rolled up sandwich. Roll sandwich in finely chopped parsley. Cut each sandwich on an angle, to make 2-3 angled pieces.
- Serve on a plate garnished with thinly, angle sliced cucumber, thinly sliced red bell pepper, and sesame salt sprinkles.
