Ham and Cheddar Strata

Total preparation time:  2-24 hours
Serves:  6

Ingredients:

  • 18 slices slightly dried out Italian bread, sliced about 3/4 inch thick
  • 6 oz. sliced ham, stacked and cut into strips
  • 1/10 oz. box frozen chopped spinach, thawed and squeezed dry
  • 1/12 oz. jar roasted red peppers, well drained, cut into thin strips
  • 4 oz./a short 1 cup Cheddar cheese, shredded
  • 4 scallions (some of the green included) scallions, sliced
  • 2 1/2 cups whole milk
  • 5 jumbo eggs
  • 2 T. Dijon mustard

Steps:

  1. Lightly coat a 2 quart shallow baking dish with non-stick spray. Put 6 slices of bread in bottom of dish. Cover with half the ham, spinach, and red peppers, cheese, and scallions.
  2. cover with 12 slices bread, overlapping top with remaining ham, spinach, red peppers, cheese and scallions.
  3. Whisk milk, eggs, and mustard in a bowl. Pour evenly over strata. Cover with foil, refrigerate at least 2 hours or over night.
  4. Heat oven to 350 degrees. Bake, covered 40 minutes. Remove foil and bake 10-15 minutes longer until center is puffed and set, and edges are browned.
