Ham and Cheddar Strata
Total preparation time: 2-24 hours
Serves: 6Ingredients:
- 18 slices slightly dried out Italian bread, sliced about 3/4 inch thick
- 6 oz. sliced ham, stacked and cut into strips
- 1/10 oz. box frozen chopped spinach, thawed and squeezed dry
- 1/12 oz. jar roasted red peppers, well drained, cut into thin strips
- 4 oz./a short 1 cup Cheddar cheese, shredded
- 4 scallions (some of the green included) scallions, sliced
- 2 1/2 cups whole milk
- 5 jumbo eggs
- 2 T. Dijon mustard
Steps:
- Lightly coat a 2 quart shallow baking dish with non-stick spray. Put 6 slices of bread in bottom of dish. Cover with half the ham, spinach, and red peppers, cheese, and scallions.
- cover with 12 slices bread, overlapping top with remaining ham, spinach, red peppers, cheese and scallions.
- Whisk milk, eggs, and mustard in a bowl. Pour evenly over strata. Cover with foil, refrigerate at least 2 hours or over night.
- Heat oven to 350 degrees. Bake, covered 40 minutes. Remove foil and bake 10-15 minutes longer until center is puffed and set, and edges are browned.
