Twisted Benedict

Serves: 6Ingredients:
- 6 Pre-packaged Croissant/Sandwich Sized/Split in half
- 10 Eggs
- 1 dozen slices Shaved Ham, thinly sliced
- 2 packages Pre-packaged Hollandaise Sauce Mixture
- 1 1/2 cups Half and Half
- Garnish: Seedless Cucumber w. Sprinkled Sesame Salt
- Garnish: Thinly Sliced Red Bell Pepper
- Garnish: Fresh Parsely/Dried Parsely/Red Pepper Flakes
- Garnish: Thinly Sliced Green Onion
- Garnish: Red Pepper Flakes
- Butter
- Kosher Salt/Coarsely Ground Black Pepper
- 1/8 cup Orange Juice
Steps:
- Heat croissant in warming oven on a pizza stone; check frequently. Beat eggs with half and half. Pour orange juice in non-stick skillet/simmer, then add ham slices. Gently warm sliced ham in OJ (1-3 min.), then turn off heat and let ham rest in OJ until needed. Prepare Hollandaise Sauce via package directions with butter/milk or butter/water depending on package Brand Name.
- Add about 1 TBSP. butter to a non-stick skillet; melt butter without browning it. Add pinch of kosher salt, 1 coarse grind of black peppercorns. Add egg mixture and loosely scramble. Turn off heat while scramble is still slightly "wet".
- Assemble the Twisted Benedict: On the bottom half of the croissants, place ham, scrambled egg, the top half of the croissants. Drizzle with Hollandaise Sauce.
- Garnish with red pepper flakes and dried parsley. Serve with fresh fruit (Champagne grapes in season are REALLY nice) for an elegant, but not-to-hard breakfast!
