Breakfast Salad

Ingredients:

  • 3 cups organic spring mix lettuce
  • 2 dozen organic grape tomatos, halved
  • 2 dozen mandarin oranges
  • 1 cup organic yukon gold potatoes, cubed
  • 6 oz organic Smoked Tempeh Strips (Fakin Bacon), diced
  • 6 organic eggs, hard boiled and diced
  • 2 tablespoons organic cold pressed coconut oil
  • 4 tablespoons organic cold pressed extra virgin olive oil
  • 1/4 cup organic orange juice
  • 1/4 cup maple syrup

Steps:

  1. Saute potatoes and tempeh seperately in coconut oil until crispy. Allow to cool.
  2. Prepare dressing with olive oil, orange juice, and maple syrup.
  3. Assemble salad with lettuce on bottom, then add tomoatoes, mandarin oranges, potatoes, and eggs.
  4. Add dressing and toss. Top with smoked tempeh.
