Breakfast Salad

Serves: 6Ingredients:
- 3 cups organic spring mix lettuce
- 2 dozen organic grape tomatos, halved
- 2 dozen mandarin oranges
- 1 cup organic yukon gold potatoes, cubed
- 6 oz organic Smoked Tempeh Strips (Fakin Bacon), diced
- 6 organic eggs, hard boiled and diced
- 2 tablespoons organic cold pressed coconut oil
- 4 tablespoons organic cold pressed extra virgin olive oil
- 1/4 cup organic orange juice
- 1/4 cup maple syrup
Steps:
- Saute potatoes and tempeh seperately in coconut oil until crispy. Allow to cool.
- Prepare dressing with olive oil, orange juice, and maple syrup.
- Assemble salad with lettuce on bottom, then add tomoatoes, mandarin oranges, potatoes, and eggs.
- Add dressing and toss. Top with smoked tempeh.
