Best-Ever Chocolate Chip Cookies

Total preparation time:  20 minutes
Serves:  8

Ingredients:

  • 1 cup shortening
  • 1/2 cup margarine
  • 1 1/3 cups granulated sugar
  • 1 cup packed brown sugar
  • 4 eggs
  • 1 tablespoon vanilla extract
  • 1 teaspoon fresh lemon juice
  • 3 cups flour
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 cup regular rolled oats
  • 3 cups chocolate chips (24 oz.)
  • 2 cups chopped walnuts or halved macadamia nuts
  • 1 cup raisins (optional)

Steps:

  1. Preheat oven to 350 degrees. In a large mixer bowl, beat together on medium speed the shortening, margarine, granulated sugar, and brown sugar until thoroughly combined, about 5 minutes. On low speed, beat in the eggs, one at a time, beating well after each addition. Beat in the vanilla and lemon juice.
  2. On wax paper, mix the flour, soda, salt, cinnamon and oats. Beat dry ingredients into the creamed mixture until well combined; mix in chocolate pieces and nuts.
  3. For each cookie, drop a scant 1/4 cup dough on parchment-lined baking sheets, about 3 inches apart. Bake for 16 to 18 minutes or until a golden brown. Transfer to wire racks to cool.
  4. Makes about 2 dozen cookies.
