Peach-Berry quiche
Total preparation time: 1 hour
Serves: 8Ingredients:
- 1/3 box cornbread mix-Jiffy brand or comparable
- fresh or frozen peaches- thawed/sliced
- 1/3 cup sugar
- 8-10 eggs
- 2 cups half and half
- 1/2 to 1 cup fresh or frozen blueberries
Steps:
- Turn on oven to 375 degrees. Spray bottom and sides of 9 x 13 casserole dish with Pam or other oil. Sprinkle bottom of dish with 1/3 box of cornbread mix.
- Spread peaches evenly on bottom of dish. Sprinkle blueberries evenly over and around peaches. Sprinkle sugar evenly over everything.
- Mix eggs and half and half in a medium bowl. Pour mixture over peaches and berries.
- Bake at 375 for 45 minutes to an hour until light brown and cooked through. Cool a few minutes and cut into 8 pieces. Great served with sweet corn muffins.
