Poached pears with raspberry/orange sauce
Total preparation time: 15 minutesIngredients:
- 2 firm-ripe pears, unpeeled
- 6 oz frozen raspberries
- frozen orange juice concentrate
- orange marmalade
- 1 tablespoon Grand Marnier (optional)
- cinnamon stick or ground cinnamon
- sweet white wine (such as Reisling)
Steps:
- Cut pears in half and remove core. Place cut side down in a large skillet. Combine 1 cup water and 1/2 cup wine(optional)or 1 1/2 cups water, 2 tablespoons orange juice concentrate, 1 tablespoon marmalade and cinnamon stick (or pinch ground cinnamon). Pour over pears. Bring to a boil; cover and simmer 10 to 15 minutes or until pears are tender but still firm. Remove from heat and cool in cooking liquid.
- Prepare raspberry orange sauce; microwave frozen raspberries, 1 tablespoon frozen orange juice concentrate, 1 tablespoon marmalade and Grand Marniere (optional) for 1 to 1 and a half minutes, stirring every 30 seconds. When finished cooking you may press through sieve to remove seeds if desired.
- Drain pears and slice into strips leaving stem end intact. Place pear halves onto 4 dessert plates fanning out slices, spoon 1/4 of the raspberry/orange sauce onto each pear half . Garnish with mint if desired.
