Blueberry Bran Muffins

Ingredients:

• 1 1/4 cup unbleached white flour
• 3/4 teaspoon baking soda
• 1/2 teaspoon baking powder
• 1/2 teaspoon salt
• 3/4 cup sugar
• 1 cup fresh or frozen blueberries
• 1/4 cup canola oil
• 1 egg
• 1 cup low fat buttermilk
• 3 cups Bran Flakes

Steps:

1. Thaw blueberries slightly. In a mixing bowl, mix dry ingredients.
2. Stir in eggs, oil and buttermilk.
3. Spray muffin pan. Set oven at 400.
4. Fold in bran flakes. Gently fold in blueberries. Fill muffin cups 3/4ths full.
5. Bake for 15 to 20 minutes. Serves 6.
