Bananas Foster Waffles

Total preparation time:  20 mins
Serves:  5

Ingredients:

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 2 tablespoons sugar
  • 1/2 teaspoon salt
  • 3 eggs
  • 1 3/4 cups milk
  • 6 tablespoons melted butter
  • 5 bananas
  • 3/4 sugar
  • 8 tablespoons butter

Steps:

  1. Make the waffles: Sift the dry ingredients together in to a large bowl. Separate the eggs, putting egg whites in a medium bowl and egg yolks into another med bowl. Beat the egg yolks with a fork and add the milk. Make a well in the dry ingredients. Add the liquid to the middle and stir in gently to make a batter.Beat the egg whites with a mixer to stiff peaks. Fold gently into the batter.
  2. Make the bananas: Put 3/4 c sugar and 1 stick of butter into a 12" fry pan. Med heat. Peel and halve the bananas lengthwise. Cut into fourths and add to the now bubbling sugar/butter mixture. Shake the pan and allow the ingredients to blend and become deeply browned. Add a little water if mixture starts to become hard. Remove to a serving bowl.
  3. Bake the waffles to nicely browned. Put a few banana slices on 5 plates in the center and lay the waffle on top. Keep in warming oven at 180 degrees until all waffles are made. Serve with carmelized bananas.
  4. Beat the egg whites with a mixer to stiff peaks. Fold gently into the batter.
  5. Put into waffle maker and bake until nicely browned. Serve with Bananas Foster on the side.

All rooms have large, openable windows to let in the pleasant easterly breeze. Pots of herbs decorate the window sills. This scene is from the Girasol Room, the brightest room in Quinta Zoe.This individually crafted iron headboard sports Amapola flowers, perfect for our Amapola (Poppy) Room. Made by a local artist just for Quinta Zoe, it houses a firm Sealy king size with luxury linens. This is our largest room - comfortable and spacious enough  even for our monthly-stay guests or a private retreat.
The view from the Domo SuiteThe Tulipan Room is a restful retreat with shower-mint green walls and a top-line king mattress. Sweeping 15' ceilings create a spacious feel. A table and comfortable chairs provide a seating area by the large colonial window overlooking on of many beautiful hand-painted tile murals on the property. This room has hi-speed internet.
The sunny Girasol Room has either king or twin beds. A 3rd person may be accommodated with the trundle twin. The large colonial window opens on a courtyard scene with lovely fountain view. This room has hi-speed internet as well as an electronic safe (standard for all our rooms).Our only 2nd floor unit, the Domo is romantic and very private. With brick dome ceilings, kitchenette and private dining patio, it is a peaceful escape from a busy world. The four-poster iron bed was designed for us and made by a local artisan of San Miguel de Allende. The room comes with hi-speed internet.
Large hand-made and openable colonial windows in proportion to 15' high beamed ceilings add to the charm of Quinta ZoeNiches and hand-made items such as tiles and jars from Dolores Hidalgo, hand-painted sinks and murals as well as hand-carved furniture are set off by the hand-made barro (compressed clay) floors.
Plenty of light highlights the hand-made colonial doors and windows of the Girasol Room. The hand-carved, hand-painted mirrors and locally-made furniture bring warmth to the colonial architecture.The beautiful dining room boasts three arched and openable doors - all the better to enjoy the mild year-round climate from our cantera-stone back patio. Locally crafted stained glass features the beloved Mexican flowers each of the rooms are named for. Two hand-crafted chandeliers round out this pleasant dining area which also houses a lending library.
The peaceful Tulipan Room is preferred by many for its restful colors and large, comfortable king-size bed. Through the large colonial window, one of several hand-painted tile murals can be glimpsed. Chilled bottled water and a fridge are are just steps away under the mural for the convenience and health of guests.Join fellow guests on our rooftop terrace any time of day or night, our only smoking area. View several church tops from the roof and enjoy the expansive sky which at times is startling deep blue and sometimes littered with puffy clouds.
Like each room at Quinta Zoe, open a door or windows to a lovely view. From the Tulipan Room, glimpse the hand-painted tile mural from Dolores Hidalgo. Enjoy the chilled bottled water and refrigerator just steps away for the health and enjoyment of our guests.While there are abundant Mexican breakfasts available within blocks of us, we offer a tantalizing gourmet breakfast served in our three-arches dining room. Quinta Zoe breakfasts are abundant and relaxing, one your taste buds can enjoy to the fullest while you meet and talk with other breakfast guests. Breakfast begin from our daily breakfast bar of home-made Maple-nut Granola served with milk and/or natural yogurt and home-made fruit sauces. Save room for one of our specialty egg dishes or choose scrambled or over-medium eggs. The appropriate breads or tortillas accompany our meals. Among our beverages, enjoy all the delicious, rish Mexican coffee (or tea) you can drink plus orange juice - sometimes freshly squeezed.
The Water Lily Room is perfect for a single person or two persons on a budget. Furnished  kitchenette, desk and private bath, this pleasant room is perfect for student or business stays. The comfortable double bed has matching hand-made, hand-painted armoirs. Standard in all our rooms are ceiling fan and electronic safes.The hand-made, hand-painted furniture creates a fantasy room that is both comfortable and useful. The Water Lily Room may be our smallest room, but it is a lovely haven overlooking our back patio and fountain.
