Maple Dijon Vinaigrette: Sauce

Ingredients:

  • 1 1/2 cups vegetable oil

  • 1/2 cup cidar vinegar

  • 1/3 cup Vermont maple syrup

  • Juice of 1 lemon

  • 1 tablespoon Dijon mustard

  • 1 tablespoon whole grain mustard

  • 1/2 teaspoon rubbed (ground) sage

  • 1/2 teaspoon cracked black peppercorns

  • 2 tablespoons chopped chives

  • 1/2 teaspoon salt

Step 1:

Whisk together all the ingredients in a bowl. Place in a large jar and let sit for at least 2 hours. Shake well before using.

Step 2:

It will keep indefinitely if refrigerated, but should be brought to room temperature before using. This may also be used for a marinade for game.
