Nigel's Knock-off of Nikki's Spicy Mushrooms

- 1/2 lb mushrooms, cleaned and sliced fairly thinly
- 2 oz clarified butter (from 2 oz of butter)
- 3 cloves of fresh garlic chopped into small pieces
- 3/4 lb fresh tomatoes, chopped or sliced then put through a food processor or blender or food mill (us
- 3/4 teaspoon cayenne pepper
- 2 1/2 teaspoons ground cumin seeds
- 1/4 teaspoon salt
Steps:
- Clarify the butter in a medium iron skillet then sauté the garlic pieces in the clarified butter, until they turn light brown (1-2 mins)
- Add all the mushrooms and cook over low-to-medium heat until they have cooked and softened up (3-4 mins, stirring occasionally)
- Now add the mixed spices and stir well to distribute them over all the mushrooms in the pan.
Then add the tomatoes and stir to mix with the mushrooms, garlic and spices.
- Cook over a medium heat for 7-8 minutes stirring occasionally until the tomato 'mush' has reduced down somewhat and has changed from tomato red to a more brownish colour.
- Serve in a warmed dish with a lid (helps keep the remaining food warm and any moisture coming off in - so that when people take their second serving it's as close to the state it was in when you first served it)
