Cherry Almond Coffee Cake

- 1 cup Sugar
- 1/2 cup Unsalted Butter, Room Temp
- 2 Eggs
- 1 teaspoon Vanilla
- 1/2 teaspoon Almond extract
- 2 cups Flour
- 1 teaspoon Baking powder
- 1 teaspoon Baking soda
- 1/2 teaspoon Salt
- 1 cup Sour cream
- 1/2 can Cherry pie filling (21 oz can)
- 1/2 cup Thinly slices almonds
Steps:
- Preheat oven to 340. Butter 10 inch springform pan.
- Beat sugar and butter until light. Add eggs, vanilla and almond extract. Set aside
- Sift flour, baking powder, baking soda and salt in medium bowl.
- Mix half of dry ingredients into butter and egg mixture, alternating with sour cream. Mix in rest of dry ingredients and rest of sour cream, stir until blended.
- Pour about 2 cups of batter into prepared pan. Drop pie filling by tablespoons evenly over batter and spread over. Pour rest of batter over top of pie filling and spread to cover. Sprinkle with almonds. Bake until toothpick comes out clean, about 1 hour. Cool in pan, cut around sides of pan, remove sides.
