Judy's Fresh Apple Cake

Serves: 10Ingredients:
- 1 cup Flour
- 1/2 teaspoon salt
- 1 teaspoon Baking Soda
- 2 cups Apples
- 1 Egg
- 1/4 cup Canola Oil
- 1 cup Sugar
- 1 tablespoon Cinnamon
- 1/4 teaspoon Nutmeg
- 1/2 cup Walnuts or Pecans
Steps:
- Peel, core & dice sweet apples (golden or red delicious) and place in medium size bowl.
- Break egg over apples.
- Add oil, sugar, cinnamon, nutmeg & nuts. Blend thoroughly with wooden spoon or rubber spatula.
- Stir dry ingredients into apple mixture just until flour is moist. Batter will seem dry.
- Spread in a greased or sprayed 8" pan (non stick works well). Bake at 350 for 30 - 35 minutes until a wooden pick comes out clean. Immediately invert on a plate, cut into 16 squares with a serated knife, sprinkle with powdered sugar. Serve warm or cooled.
