Amaretto Cheesecake
Serves: 12Ingredients:
- Crust
- 50 Nilla wafers, finely rolled
- 1/3 cup sugar
- 1/2 cups almonds, finely chopped
- 1/2 cup margarine, melted
- Filling
- 3 8 oz. packages cream cheese, softened
- 2/3 cup sugar
- 3 eggs
- 1 cup sour cream
- 1/2 cup Amaretto
Steps:
- Crust:
Combine all of the crust ingredients and press against bottom and 2 inches up sides of 9 inch spring form pan. Set aside.
- Filling:
Beat together cream cheese and 2/3 cup sugar till smooth; blend in sour cream, eggs and Amaretto. Pour into prepared crust.
- Bake at 350 degrees for 1 hour. Turn off oven for 30 minutes, leaving door slightly ajar. Cool. Chill 4 hours or until serving time.
Garnish with 2 kiwi, peeled, sliced and halved or fresh berries arranged on top.
