Delmonico Potatoes
Serves: 8Ingredients:
- 8 potatoes, boiled
- 8 tablespoons butter or margarine
- 6 tablespoons flour
- 2 1/2 cups half and half
- 1/2 teaspoon salt
- few twists ground pepper
- 1 cup cheddar cheese, grated
- 1/2 cup bread crumbs
Steps:
- Preheat oven to 400 degrees. Wash, peel and dice potatoes and boil until just done in salt water. Drain and place in 2 qt. greased casserole dish.
- In saucepan, melt 6 Tbl. butter or margarine and blend with 6 Tbl. flour. Gradually add cream. Heat gently to boiling, stirring constantly. Season with salt and pepper. Pour over potatoes. Top with cheese.
- Melt the remaining 2 Tbl. of butter; stir in bread crumbs mixing until coated. Sprinkle crumbs over casserole. Bake until cheese melts and is bubbly - 20-30 minutes.
