Zucchini Fritatta

Total preparation time:  20 minutes
Serves:  8

Ingredients:

  • 3 zucchini, sliced
  • 1/4 cup onion
  • 2 tablespoon olive oil
  • 9 eggs, beaten
  • 1/4 cup chopped fresh chives
  • 3/4 cup grated Pecorino Romano cheese
  • 1/4 teaspoons ground black pepper

Steps:

  1. Lightly grease or spray 8 individual ramekins.
  2. Beat eggs with grated cheese, chives and ground pepper in a medium bowl.
  3. Saute onion and zucchini in small frying pan until lightly browned. Cool slightly.
  4. Place an equal amount of sauted zucchini and onion in prepared ramekins.
  5. Poor egg mixture to fill ramekins 3/4 full over onion and zucchini. Bake at 350 degrees for 45 minutes. Top with additional cheese if desired. Egg substitute can be used to make recipe heart healthy.
