Zucchini Fritatta

- 3 zucchini, sliced
- 1/4 cup onion
- 2 tablespoon olive oil
- 9 eggs, beaten
- 1/4 cup chopped fresh chives
- 3/4 cup grated Pecorino Romano cheese
- 1/4 teaspoons ground black pepper
Steps:
- Lightly grease or spray 8 individual ramekins.
- Beat eggs with grated cheese, chives and ground pepper in a medium bowl.
- Saute onion and zucchini in small frying pan until lightly browned. Cool slightly.
- Place an equal amount of sauted zucchini and onion in prepared ramekins.
- Poor egg mixture to fill ramekins 3/4 full over onion and zucchini. Bake at 350 degrees for 45 minutes. Top with additional cheese if desired. Egg substitute can be used to make recipe heart healthy.
