Bald Mountain Toasted Coconut Pie

Serves: 8Ingredients:
- 3 eggs (beaten)
- 1 1/2 cups sugar
- 1/2 cup butter (melted)
- 4 teaspoons lemon juice
- 1 teaspoon vanilla
- 1 1/3 cups coconut (fresh, unsweetened)
- 9-inch unbaked pastry shell
- Whipped cream for garnish
- Toasted coconut for garnish
Steps:
- Preheat oven to 350 dergrees. Thoroughly combine eggs, sugar, butter, lemon juice and vanilla.
- Stir in coconut and pour into pie shell.
- Bake for 40-45 minutes or until knife inserted in middle comes out clean.
- Cool and then chill.
- To serve garnish with whipped cream and toasted coconut.
