Macadamia Nut Cornbread

Total preparation time:  15 min.
Serves:  8

Ingredients:

  • 3 Eggs
  • 2 cups White or Yellow Cornmeal
  • 1 teaspoon Baking Soda
  • 1 teaspoon Salt
  • 1/2 cup Macadamia Nut Oil
  • 1/2 cup Macadamia Nut 'Fines'
  • 1 1/2 cups Buttermilk
  • 1/2 cup Sugar (optional)

Steps:

  1. Combine eggs, oil and milk.
  2. In separate bowl combine dry ingredients.
  3. Stir in wet ingredients and combine just until moist; let stand 5 minutes. Do not over mix!
  4. Cook in 350 degree oven for about 30 minutes or until firm in center and golden brown. Excellent served warm.
