Puffy Fruit Pancake

Serves: 6Ingredients:
- 2 apples
- 1 cup blackberries
- 6 tablespoons butter
- 1/3 cup brown sugar
- 1 teaspoon cinnamon
- 6 eggs
- 1 1/2 cups milk
- 1 1/2 cups flour
- 1 1/2 teaspoon vanilla
Steps:
- Prehat oven to 425 degrees. Melt butter in saute' pan, add sliced peeled apples, and berries, til tender but firm, add sugar and cinnamon.
- Butter a 10-12 inch round pie pan well. Put fruit in bottom of dish. In blender mix eggs, milk, flour,vanilla, and a little more brown sugar 2 tlb. or so, blend well.
- Pour custard over fruit, aprinkle with more cinnamon, bake 20-25 minutes til puffy and brown, and middle is done.
- Let stand 10 minutes before cutting, sprinkle with powdered sugar, and serve with maple syrup or a fruit syrup.
