A Place In Time: Hill Country Frittata

Ingredients:

  • 1 tablespoon olive oil
  • 1/2 medium onion diced
  • 1 small potato boiled pealed & chopped
  • 1/2 teaspoon Mesquite grilling blend Ms. Dash
  • 1/4 cup hormel real crumbled bacon
  • 1 ripe avacado
  • 1 tablespoon chopped chives
  • 1/4 cup Monterey Jack cheese grated
  • 3 eggs lightly beaten with 1 tablespoon water

Steps:

  1. In large skillet, add olive oil, onions, seasoning and potatoes. Stir occasionally until vegetables are browned. Sprinkle the bacon, avocado, and chives evenly in the pan. Pour in the egg mixture and sprinkle the cheese over the top. Cover and cook until cheese is clearly melted and begins to set up. Take off lid and off heat until sets up. Cut into quarters and serve one quarter per serving. Remaining quarter(s) may be sliced again and set out for seconds (they’ll disappear quickly). Yield: 2 generous servings. Tip: Prepare potato and bacon the night before and refrigerate.

1914 sliding glass doors help separate the sleeping area from the bath.  This comfortable bed and spacious room give a feeling of luxury that can't be beat.  Private exit to the porch is also available.The Blue Room Bath is quite large and bright.  The two sinks and glassed in shower provide plenty of stretch room.
The separate door for closet and commode help keep things tidy.
A special Lavender basket can really kick off the entire weekend.The Garey room private bath will take you back to a time when large cast iron tubs ruled the world.  Of course, now we've added a shower head.  A great pedestal sink and cute closet walk way help dress it up.
The Ruby Belle Sunroom is excellent for meditation and even some artwork.
The Ruby Belle sitting area highlights a great view and easy access to the two bedrooms, bath and sunroom.The Ruby Belle Bath has ample room for stretching!
Ruby Belle's first bedroom has an extra sitting area for TV, DVD or a view over the front lawn.This luxury queen bed is the highlight of the first bedroom of the upstairs Ruby Belle Suite.
The quaint 2nd upstairs beedroom in the Ruby Belle Suite has room for 2 twins and one full size bed.It's just like a mini apartment in the Garden View Suite.  But you don't have to cook!
Enjoy the sunset or a nice cup of tea.  Perhaps it is time to catch up on reading or writing in the Garden View Suite.A very spacious and comfortable bathroom will help you scrub away those troubles.
The blue room provides a light and spacious respite from a delightful day of shopping, gourmet food and wonderful entertainment.Did you know that Matthew and Sandra spent the night in the Garey room?  What a cozy hide away with private entrance.
