Blueberry Strata
Total preparation time: 24 hrs
Serves: 12Ingredients:
- 15 slices Bread
- 1 cup blueberries
- 8 oz Cream cheese
- 8 eggs
- 2 cups milk
- 1/3 cup maple Syrup
- 1 tablespoon Cinnamin
Steps:
- PLACE 2/3 OF BREAD CUBES IN A GREASED 13 X 9 BAKING DISH. CUT CREAM CHEESE IN SMALL CUBES AND DOT OVER BREAD. TOP WITH BLUEBERRIES AND REMAINING BREAD. IN A LARGE BOWL BEAT REMAINING INGREDIENTS AND POUR OVER BREAD. COVER WITH FOIL AND REFRIGERATE OVERNIGHT.
( THE NEXT MORNING I REMOVE THE DISH AT LEAST 30 MINUTES BEFORE I PUT IT IN THE OVEN.)
COVER AND BAKE AT 350 FOR 30 MINUTES. UNCOVER AND BAKE ADDITIONAL 30 MINUTES OR MORE UNTIL GOLDEN BROWN AND CENTER IS SET.
- SAUCE:
1 C SUGAR
2 TABLESPOONS CORNSTARCH
1 C WATER11 C BLUEBERRIES
1 TABLESPOON BUTTER
IN A SMALL SAUCEPAN, MIX SUGAR AND CORNSTARCH. ADD WATER, AND BRING TO A BOIL FOR 3 MINUTES STIRRING CONSTANTLY. STIR IN BLUEBERRIES, REDUCE HEAT AND SIMMER 8-10 MINUTES. STIR IN BUTTER UNTIL MELTED. SERVE OVER STRATA. MAKES 1 3/4 C SAUCE.
TRY STRAWBERRIES, RASBERRIES OR BLACKBERRIES TOO. SAUCE IS GREAT OVER PANCAKES OR FRENCH TOAST.
The skins on frozen blueberries are to tough but Maine canned blueberries work good.
