Zucchini Nut Delight: Breakfast-Brunch

Ingredients:

  • 4 eggs

  • 500 g brown sugar

  • 250 ml vegetable oil

  • 450 g white flour

  • 3/4 teaspoon baking soda

  • 3/4 teaspoon baking powder

  • 600 g garden fresh grated zucchini

  • 250 g ground hazelnuts

  • 1 1/2 teaspoons cinnamon

  • chocolate icing

Step 1:

Blend eggs and sugar.

Step 2:

Add nuts and oil. Mix well.

Step 3:

Combine dry ingredients (flour, baking soda, baking powder, cinnamon) and add to egg mixture. Blend in well.

Step 4:

Add grated zucchini.

Step 5:

Put baking paper on baking tray. Pour mixture on baking tray. Bake at 200 ° C for about 30 - 40 minutes. After cooling cover cake with chocolate glaze. Great for breakfast!
