Cardamom Tea Cookies

Total preparation time:  40 minutes
Serves:  48

Ingredients:

  • 1 cup butter
  • 1 egg yolk
  • 2/3 cup sugar
  • 1/2 teaspoon ground cardamom
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 cups flour
  • 1/2 cup sugar

Steps:

  1. Allow butter and egg yolk to sit at room temperature for 30 minutes.
  2. In a large mixing bowl, beat butter for 30 seconds. Add the 2/3 cup of sugar and beat for 5 minutes unil light and fluffy. Add the egg yolk, cardamom, baking soda, and salt, beat until combined. Add the flour and mix until combined. Put in plastic wrap and refrigerate for about an hour or until it handles easily.
  3. Shape dough into 3/4 inch balls or shape with a melon baller(large end) placing 2 inches apart on cookie sheets. Bake for 10 minutes in a 350 degree oven or until edges are lightly browned. Cool on cookie sheet for 1 minute, transfer to wire racks and cool completely.
  4. Gently roll cookies in sugar coating all sides. Store in an airtight container for up to three days or freeze.
