Banana Chocolate Chip Coffee Cake

Total preparation time:  45 minutes
Serves:  24

Ingredients:

  • 1 1/3 cups sugar
  • 1 cup sour cream
  • 1/4 cup margarine, softened
  • 4 eggs
  • 4 medium, ripe bananas
  • 2 teaspoons vanilla
  • 2 cups flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1 cup chocolate chips

Steps:

  1. Heat oven to 375 degrees F. Spray a 9 x 11 inch pan with nonstick cooking spray.
  2. Beat sugar, sour cream, margarine, and eggs in large bowl on low speed for 1 min.
  3. Beat in flour, salt, and baking soda on medium speed 1 min.
  4. Beat in bananas and vanilla on low speed for 30 seconds. Stir in chocolate chips.
  5. Spread in pan. Bake 35-40 minutes or until light brown on top. Cool in pan. Cut into two-inch bars.

A comfortable rattan chaise lounge beckons you to stretch out beside the fire. Step onto the deck through private French doors that frame the inspiring view of Cape Cod Bay and the dunes of Sandy Neck beach. On a clear day, the Pilgrim Monument in Provincetown is visible with the naked eye, but we've provided binoculars to follow the intricacies of the great blue herons, ospreys, and red-tail hawks that soar above the marsh. At night, from the comfort of the pencil post bed, the moon and stars twinkle goodnight through the eyebrow window.
