Betty's Corn Pudding


Serves:  6

Ingredients:

  • 2 cups fresh corn, cut from the cob
  • 4 well–beaten eggs
  • 2 cups light cream
  • 1 tablespoon butter
  • salt and pepper

Steps:

  1. Combine all ingredients and place in a buttered 2 qt. baking dish.
  2. Place dish in a shallow pan of very hot water, water level about 1” deep.
  3. Bake at 350 for 30-40 minutes until an inserted knife appears clean.
