Gluten-Free Pancakes

Total preparation time:  15 minutes
Serves:  4

Ingredients:

  • 3/4 cup Cornstarch
  • 3/4 cup potato starch
  • 1/2 cup Popcorn Flour
  • 1/2 cup Brown Rice Flour
  • 1/4 teaspoon Guar Gum
  • 1/2 teaspoon Salt
  • 1 1/4 teaspoon Baking Powder
  • 3/4 cup Milk
  • 1 tablespoon Oil
  • 1/4 cup Sugar, Granulated
  • 1 Egg
  • 1/2 teaspoon Vanilla

Steps:

  1. Pour milk into glass measuring cup. Add egg, oil and vanilla. Whisk to combine.
  2. In medium mixing bowl, combine all dry ingredients.
  3. Pour milk mixture to dry ingredients stirring to combine. Be sure to remove all lumps from the batter. It will be thin.
  4. Pour batter onto hot, greased griddle to make pancakes of the size you desire. Turn pancakes over when lightly bronwed. When other side is lightly browned, remove from griddle and serve.
