The Best Peanut Butter Cookies

- 2 1/2 cups All purpose flour
- 1/2 teaspoon Baking Soda
- 1/2 teaspoon Baking Powder
- 1/2 teaspoon Salt
- 1/2 lb Butter, Salted (2 sticks)
- 1 cup Brown Sugar, packed
- 1 cup Sugar, Granulated
- 1 cup Peanut Butter
- 2 Eggs
- 2 teaspoons Kahlua (or vanilla or other extract)
- 2 cups Chocolate Chips
Steps:
- Heat over to 350 degrees. Sift flour, baking soda, baking powder and salt in medium bowl. In bowl of electric mixer or by hand, beat butter until creamy.
- Add sugars; beat until fluffy (about 3 minutes with an electric mixer). Beat in peanut butter until fully incorporated. Add eggs, one at a time. Add Kahlua.
- Gently stir dry ingredients into peanut butter mixture.
Add chocolate chips.
- Working with 2 tablespoons of dough at a time, roll into a large ball. Place balls 2 inches apart on parchment covered cookie sheet. Press each dough ball with the back of a fork dipped in flour to make a criss-cross design.
- Bake until cookies are puffed and slightly brown on the edges but not on top – about 10 to 12 minutes. (cookies will not look fully baked) Cool cookies on cookie sheet (2-4 minutes) till set then transfer to wire rack to cool completely.
