Warm Chocolate Ooze Cake

Total preparation time:  20 Minutes
Serves:  4

Ingredients:

  • 4 oz Butter
  • 4 oz Bittersweet Chocolate
  • 2 Whole Eggs
  • 2 Egg Yolks
  • 1/4 cup Sugar
  • 2 tablespoons Flour

Steps:

  1. Use a double boiler to melt the chocolate and butter together. Remove just before chocolate is completely melted.
  2. While the chocolate is melting, beat together the eggs and sugar until light and thick.
  3. Whisk together well the chocolate mixture (will still be quite warm) and slowly add to the egg mixture.
  4. Prepared individual 4 oz molds - if you do not have any individual molds individual muffin tins may be used. You cannot use a multiple muffin tin as cakes will break when unmolded. Butter thoroughly , then flour but making sure to tap out excess flour. Pour 4 oz each into prepared mold.
  5. Bake at 450 for 8 minutes. Remove from oven and invert onto serving dish. Let set for 20 seconds. Lift off mold. Dust with powdered sugar and a dollop of fresh whipped cream. Serve immediately.
