Warm Chocolate Ooze Cake

Serves: 4Ingredients:
- 4 oz Butter
- 4 oz Bittersweet Chocolate
- 2 Whole Eggs
- 2 Egg Yolks
- 1/4 cup Sugar
- 2 tablespoons Flour
Steps:
- Use a double boiler to melt the chocolate and butter together. Remove just before chocolate is completely melted.
- While the chocolate is melting, beat together the eggs and sugar until light and thick.
- Whisk together well the chocolate mixture (will still be quite warm) and slowly add to the egg mixture.
- Prepared individual 4 oz molds - if you do not have any individual molds individual muffin tins may be used. You cannot use a multiple muffin tin as cakes will break when unmolded. Butter thoroughly , then flour but making sure to tap out excess flour.
Pour 4 oz each into prepared mold.
- Bake at 450 for 8 minutes. Remove from oven and invert onto serving dish. Let set for 20 seconds. Lift off mold. Dust with powdered sugar and a dollop of fresh whipped cream. Serve immediately.
