Bess's Banana Nut Bread

Serves: 8Ingredients:
- 2 cups sugar
- 1 1/2 cups chopped pecans
- 1/2 cup butter
- 3 cups flour
- 1/2 cup warm vegetable oil
- 2 teaspoons soda
- 1 1/2 teaspoon vanilla
- 1/2 teaspoon salt
- 4 well beaten eggs
- 6 overly ripe bananas
- 1 1/2 cups raisins
Steps:
- Cream sugar, warm oil and butter together.
- Add eggs and vanilla, whipping into a batter.
- Sift four, soda and salt and add to batter.
- Smash bananas together and add to mixture along with raisins and nuts.
- Bake in standard sized loaf pans in preheated 300 degree oven for 1 1/2 hours. Make sure cake has pulled away from the sides. The knife test is tricky as you may run into a banana. Also, adjust cook time if using dark cookware. It will bake faster by about 15 minutes.
