- Our signature dish is PONDER COVE'S OATMEAL TOFFEE COOKIES
2 STICKS SOFT BUTTER 3/4 WHITE SUGAR 3/4 BROWN SUGAR 1 tsp VANILLA 1 EGG 1 1/2 CUPS SIFTED FLOUR 1 tsp SIFTED BAKING SODA 1 1/2 CUPS OATMEAL 1 CUP CHOCOLATE CHUNKS 1 CUP RAISINS 1 CUP TOFFEE CHIPS
Cream sugar and butter until light and fluffy add egg and vanilla. Slowly add flour and soda mixture a bit at a time. Then add oatmeal, chocolate chips, raisins and toffee. Seperate into three parts and roll each in saran wrap making a log about 1 1/2 inches thick. Put in fridge for up to a week or in the freezer for up to 2 weeks. When you decide to bake cut in 3/4 inch sections and place on parchment paper for about 14 minutes at 350. I find doneness to be so personal. Some like them crispy others cakey. With this recipe you can't go wrong. xxoo martha
