Country Gentlemen's Casserole

Ingredients:

• 2 lb Country Sausage
• 4 oz Chopped Chiles
• 1 lb Monterey Jack Cheese -grated
• 8 Eggs
• 1/2 tablespoon salt
• 1/2 tablespoon Pepper

Steps:

1. The night before you plan to eat the casserole fry and drain sausage. Place in 13x9x2 inch casserole dish.Layer chiles and cheese over sausage. Cover with foil and refrigerate overnight.
2. In the morning, pre-heat over to 350 degrees. Beat eggs add salt and pepper. Pour in casserole dish over sausage, chiles and cheese. Place casserole in oven and bake for 45 minutes or until the eggs are set.
3. Remove and serve. Can be served with salsa, biscuits, and/or gravy.
